
We all have those nights when the fridge looks a bit random, the clock’s ticking, and the idea of cooking something “proper” feels like a chore. That’s exactly why I love a good stir-fry. It’s fast, colourful, and a brilliant way to use up whatever veg you’ve got lying around.
This chicken stir-fry is one of my go-to weeknight dinners. It takes less than 30 minutes from chopping board to plate, and it never fails to feel a little bit special — even though it’s so simple.
What You’ll Need
(Serves 4)
- 2 large chicken breasts, thinly sliced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce (optional, but so good)
- 1 tbsp honey or brown sugar
- 2 garlic cloves, minced
- 1 tsp fresh ginger, grated
- 1 tbsp vegetable oil (or sesame oil for extra flavour)
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 1 carrot, thinly sliced or julienned
- A handful of broccoli florets
- 3 spring onions, chopped
- 1 tbsp sesame seeds (optional, but makes it look fancy)
How to Make It
- Marinate the chicken
Pop the chicken in a bowl with the soy sauce, honey, garlic, and ginger. While it soaks up all that flavour, you can get your veggies prepped. - Get the pan sizzling
Heat up your wok or frying pan with the oil until it’s nice and hot. - Cook the chicken
Stir-fry the chicken for about 4–5 minutes, until it’s golden and cooked through. Take it out and set it aside. - Veg time!
In the same pan, throw in the peppers, carrot, and broccoli. Stir-fry for 3–4 minutes — you want them bright and slightly crunchy, not soggy. - Bring it all together
Add the chicken back in, stir through the oyster sauce (if using), and toss everything together until it looks glossy and irresistible. - The finishing touch
Sprinkle over your spring onions and sesame seeds, then serve straight away with rice or noodles.
Little Extras
- Feeling spicy? Add some fresh chilli or a splash of sriracha to the marinade.
- Want crunch? Toss in some cashews or peanuts just before serving.
I swear, once you’ve made this a couple of times, you’ll never need to look at the recipe again. It’s the kind of dish you can freestyle with whatever’s in the fridge, and it always comes out tasty.
It’s fresh, healthy, quick, and it definitely beats another soggy takeaway. Give it a try next time you’re short on time but still want something that feels like a treat.
